How to Clean Spiny Lobsters: A Step-by-Step Guide

Spiny lobsters, known for their tender meat and spiny exteriors, are a prized catch for recreational and commercial fishers alike. Whether you’ve caught them fresh or purchased them, cleaning them properly is essential to get the most out of your lobster feast. Follow this guide to learn how to clean spiny lobsters safely and effectively.

What You'll Need:

  • Sharp kitchen shears or heavy-duty scissors
  • A paring knife
  • A clean cutting board
  • Latex or fishing gloves (optional but recommended for handling spines)
  • A bowl of ice water
  • Trash or compost bin for discarding shells
  • Paper towels for cleanup

Step 1: Chill the Lobsters

If you're dealing with live spiny lobsters, the first step is to chill them. Place the lobsters in a bucket of ice or refrigerate them for about 15-20 minutes. This slows their movement and makes handling them safer. It also helps preserve the quality of the meat.

Step 2: Remove the Tail

The tail is where the bulk of the lobster meat is located. To remove it:

  • Begin by first making a cut under the carapace of the lobster, roughly 2/4 of an inch in and all the way around.
  • Next, hold the lobster by its carapace (the upper shell) with one hand and grasp the tail firmly with the other.
  • Twist the tail counterclockwise until it separates cleanly from the body. You may need to use a bit of force.

Step 3: Remove the Internal Vein with the Lobster’s Antenna

One of the best and most traditional ways to clean a spiny lobster tail is by using the lobster’s own antenna to remove the internal vein (also known as the digestive tract). Here’s how to do it:

  • After twisting off the tail, remove one of the lobster’s long antennas.
  • Cut the antenna off just wide enough to fit into the opening at the base of the lobster's tail.
  • Push the antenna into the opening using the cut side first, not the tip. This allows the barbs of the antenna to grab onto the inside digestive track. 
  • Give one rotation and slowly pull the antenna back out, and the vein should come out along with it in one clean motion.

This is an effective and efficient way to devein the lobster, ensuring that the meat is ready to cook without any unwanted internal matter.

Step 4: Trimming (optional)

Before either cooking or vacuum sealing, it is beneficial to trim the tails to avoid the danger of punctures in the future. It also makes future cooking a breeze. 

  • Begin by trimming the sharp points at the ends of each section of the tail wishing a pair of kitchen scissors. These can poke you while cooking/processing. 
  • Next, remove the small swimmerets from by snapping them at their base. 

Step 5: Discard the Shells Properly

Spiny lobster shells can be composted if you have a system in place, but otherwise, they should be discarded in the trash. Be careful when handling them, as the spines can puncture bags and skin.

Cooking Your Cleaned Lobster

Now that your lobster is clean, it’s ready to be cooked in a variety of ways—grilled, boiled, baked, or even sautéed! Remember that spiny lobster cooks quickly and is best enjoyed when the meat is tender and juicy.
